Back in 2022 my partner and I, Valeria, went to Colombia to visit my family. While there my Tita (grandma) made empanadas for my family. My partner, Ary, loved them! One day I was very homesick and we decided to recreate Tita’s empanadas recipe. They came out as delicious as her's and made me feel like I was at home. We decided to make some for our friends. They absolutely loved them and encouraged us to sell them. At first we started out only making 15 empanadas and the people loved them. We slowly started making more and more as well as offering different Colombian treats and this is when Chimis' was born. We came up with the name “Chimi's” because our puppy loves our empanadas and his nickname is chimichurri.
